As I’ve mentioned before – – our family needs QUICK and EASY dinners for Sunday night. We go to church from 2:30-5:30 pm {if you can believe it} and so when we get out – – we are FAMISHED and want food RIGHT AWAY! LoL.
The last thing I want to do is spend over an hour preparing our dinner.
My sister gave me a suggestion for a yummy meal this past weekend and it was HUGE hit with my ENTIRE family {which usually never happens!} Of course, I made Joe and I’s a little different from the kids’ {they’re picky} but it made everyone happy and that’s all that matters, right?
Chicken Pita Sandwiches
Here’s whatcha do:

Pick up any kind of flat bread/pita bread.
I found this Stonefire kind at my local grocery store and it was on sale – 2 for $5. Super delish.
Pick up a couple of Rotisserie chickens and SHRED the meat off of it. {I did this BEFORE church to save time}.
Put a few heaping spoonfuls of mayo in a bowl and add to it some crushed garlic {I added about 3/4 teaspoon} and a few shakes of dried basil.
{Fresh basil would be REALLY good but I didn’t have any.}
Mix it all together and spread on top of your flat bread.
{This mayo mixture MAKES the whole thing!}
Add sliced red onions.
Chopped artichokes. {Yum!}
Sliced tomatoes.
Your shredded chicken.
And a bunch of mozzerella cheese.
Broil in the oven for about 5 minutes or until cheese is bubbly.

We served ours with potato chips {THIS kind is our family favorite} and the following salad {which I also made up ahead of time}.
Soooooooo yummy!
Fresh Corn and Garbanzo Bean Salad:
4 ears of corn cooked and cut
1 15 ounce can of Garbanzo beans, rinsed
1 cucumber chopped
2 green onions, chopped thinly
2 Tbs. olive oil
1/2 cup fresh cilantro, choppped
The juice from 2 fresh limes
Add the first four ingredients to a bowl and mix together.
Add the olive oil, cilantro and fresh lime and stir.
Let set in the fridge for a few minutes.
The lime gives it SUCH a good flavor!!!

We have church 2-5. It sucks! Whoever designed our stake center didn't put in an overflow (genius, right?) and all 3 wards are big enough that we don't fit in just the chapel. So the previous ward has to be out of the gym by the time the next ward starts. So there's no overlap in our building.

Holy mole that is an AWFUL church time! Do they have 3 wards in your building?
My go-to is to put several chicken breasts in the crock pot, half a bottle of BBQ sauce, a full bottle of canned pineapple, and sometimes some coconut milk if I have any. Then the house smells all tropical too when we get home ๐
