I made the YUMMIEST soup last night.
We snarfed it so fast I forgot to take a pic so the Soup Nazi will have to do ๐
Last week Joe and I had a mid-week date night at the OG for dinner {haven’t been there in forever and man it tasted good!} and per usual I ordered the soup, salad and breadsticks.
I was so full after my 1 bowl of gnocchi and 1 bowl of toscana {plus 5 million breadsticks, lets be honest} that I didn’t have any room in my stomach for the minestone.
And I’ve been craving minestrone but fun fact:
Did you know that what makes minestrone MINESTRONE is that it’s all veggies and pasta – – no meat?
I didn’t.
{Sometimes I’m amazed that I received a college degree, you guys!}
So I took a recipe that I found and added some meat into that baby and boy oh BOY – – it was a hit!!
Even Cars – my NON-soup eater told me:
“Mom – – you’re really turning me onto soup lately.”

True story.
So here ya go. It’s soup season and I’m demanding that you try this. OH – – and an added bonus:
IT’s A CROCK POT RECIPE!!!!!!
So really, everyone wins!
Sausage Minestrone Soup
4 cups vegetable broth
{all I could find at my local grocery store was the organic kind. And if I’m being honest I was afraid it was gonna taste gross. But have no fear – – it didn’t! So just grab what you can find.}
2 cups water
2 cans diced tomatoes with garlic, onion and basil
{not mandatory to get this kind but it gives it extra flavor for sure.}
2 tsp. dried parsley
2 tsp. dried basil
1 tsp. dried oregano
3/4 tsp dried and crushed rosemary
1/2 tsp dried thyme
2 bay leaves
1/2 tsp sugar
1/2 tsp salt
1/2 tsp pepper
4 cloves of garlic, minced
1 cup diced onions
1 cup diced carrots
1 – 1 1/2 cup diced zuchinni
{I peeled most of mine}
1 can drained, dark red kidney beans
1 can drained, white navy beans
Throw ALL of this in the crockpot together. Mix it all up with a spoon so the seasonings go everywhere.
BROWN: 1 lb. sausage.
Drain and add to the crockpot.
Cook on low for 4 – 6 hours.
ABOUT AN HOUR BEFORE YOU PLAN TO EAT – – cook 1 cup of mini shell pasta {elbow pasta would work too!} per package instructions. Drain the pasta and add to the soup.
ALSO ADD: 1 can of Italian green beans, drained
Boom shacka lacka – – it is SO good. Serve with warm rolls and crackers to dip.
