Lastly, 2 of our family’s very favorite BREAKFAST recipes are my Grandma’s sausage and egg casserole and our cinnamon roll casserole.  EnJoY! And if you decide to re-create this RISE UP dinner for your own family  – – be sure tag me on social media.  I love seeing what other people come up with!

Grandma’s
SAUSAGE & EGG CASSEROLE

1 lb. sausage, browned and drained
2 c. grated cheddar cheese
6-8 eggs, beaten
1 1/2 cup milk
8 slices of bread, without crusts
3/4 tsp. dry mustard
1/2 onion, chopped or 2 Tbs. dried onion
1 can cream of mushroom soup plus 1/2 cup milk

Butter bread and lay buttered side down on bottom of 9×13 pan.  Make sure bread completely covers bottom with no pan showing.  Add sausage and cheese on top.

Beat eggs with 1 1/2 cups milk. Beat in dry mustard and onion.  POur over mixture in pan and regrigerate OVERNIGHT!

Before baking, mix 1 can of cream of mushroom soup with 1/2 cup milk.  Pour over egg mixture.  Bake at 325 Degrees for 1 hour and 15 minutes.

Side Note: I’m not a huge fan of cream of mushroom BUT….it makes this casserole super yummy and adds to it a bit of a gravy taste.

CINNAMON ROLL CASSEROLE

2 packages Pillsbury tube cinnamon rolls
{Not the big ones.  Just the regular sized ones}
1 cube butter
1 cup brown sugar

Pour 1/2 cube melted butter into a 9×13 pan.  Sprinkle 1/2 cup brown sugar over the butter.  Cut cinnamon rolls into chunks and drop into pan.  Drizzle the other 1/2 cup of melted butter on top of the cinnamon rolls.  Sprinkle with the other 1/2 cup brown sugar.

Bake according to the directions on the cinnamon roll package {usually takes about 10-15 minutes longer than suggested}.

Cook until edges are golden brown and the middle is not gooey.  Drizzle with icing from the cinnamon rolls {I always take the lid off of them and microwave for about 20 seconds so it pours easily.}
