Red Velvet Cupcakes with Cream Cheese Frosting

I’m a BIG BIG fan of Red Velvet ANYTHING.

{ESPECIALLY this time of year}.

Here’s my favorite recipe for Red Velvet Cupcakes.

{They make a GREAT dessert for Christmas parties!}

Oh yeah…did I mention…they’re EASY to make?

Red Velvet Cupcakes

1 Red Velvet boxed cake mix {told you they were easy!}

1 small box of instant chocolate pudding

3 eggs

1/3 cup oil

1 1/4 cup water

Mix cake mix, eggs, oil and water. Add dry pudding mix into batter and mix again.

Fill cupcake liners about 1/2 full with batter. Bake at 350 Degrees for 20 minutes.

Cool completely before frosting.

Cream Cheese Frosting

2 – 8 oz. packages of cream cheese, softened

1/2 cup butter

1 tsp. vanilla

2 1/2 cup powdered sugar

pinch of salt

Mix cream cheese and butter until smooth. Blend on slow as you add vanilla, salt and powdered sugar. Once blended, turn mixer on high and blend until nice and fluffy.
