While we were up at the cabin a couple of weeks ago, my brother made the most DELICIOUS and HEALTHY breakfast.
I couldn’t get enough.
I had him give me the recipe and as soon as we got back home, I made some up myself. Joe and I LOVE this! And I LOVE that you can throw it all in the night before.
OVERNIGHT OATMEAL
2 apples, peeled, cored, chopped into 1/2 inch pieces
1 1/2 cups Almond Milk {this makes it SOOO yummy!}
1 1/2 cups water
1 cup uncooked steel-cut oats
2 Tbs. brown sugar
1/2 tsp. cinnamon
1 Tbs. ground flax seed {I left this out because I didn’t have any}
1/4 tsp. salt
Optional garnishes: Chopped nuts, berries, bananas, raisins and additional Almond milk upon serving.
Coat the inside of your Crock-Pot with cooking spray.
Add all ingredients {except garnishes} to slow cooker.
Stir, cover and cook on low for 7 hours.
Spoon oatmeal into bowls; add additional toppings, if desired.
Store leftovers in refrigerator. Freezes well.
To reheat single servings: Put 1 cup cooked oatmeal in microwave proof bowl. Add 1/3 cup milk. Microwave on high for 1 minute; stir. Contine cooking for another minute or until hot.
