My mom made this pie for us growing up and it’s a MUST for summertime. It’s one of my FAVORITES and it’s surprisingly EASY! Also: strawberries are on SALE this week at Sprouts so…there’s no excuse for you not to try it.
Marci’s Mom’s Strawberry Pie
4-5 cups strawberries, quartered
1 cup water
1 cup sugar
Dash of salt
2 HEAPING Tbs. Cornstarch
2 Tbs. Strawberry JeLL-O
1 Tbs. butter
1/4 tsp. red food coloring
Bake pie crust {I purchased a Marie Calendar’s frozen pie crust and it was ready within 12 minutes!} LET COOL COMPLETELY!
Mix sugar, cornstarch and water.
Stir constantly over medium heat.
Bring to a boil, stirring constantly – mix well until thickened.
Remove from heat andt hen stir in JeLL-O, butter and food coloring. Fold strawberries in and pour in baked pie shell.
Refrigerate for a few hours before serving.
Everytime my family has a barbeque, one of us is assigned to make our Grandma Lamoreaux’s Famous pasta salad. It’s quite simple really and basically just involves boiling your pasta, chopping up your veggies and mixing together your dressing.
Here are SOME of the things that MY Grandma used to add to HER salad:
*CELERY {allergic to it}
*SHRIMP {BLeH!}
*RADISHES {Double BLeH!}
*CHEESE {Yum!}
While all of those things are yummy {to some!} here is what I now add to MY version of the salad:
*Green peppers
*Cucumbers
*Tomatoes
*Green Onions
*Cheese
Peas would even be good in there.
{If my kids didn’t barf at just the SIGHT of them!}
Basically….you can add ANY or ALL of the above ingredients.
As for the rest of the salad:
Boil your pasta according to directions on the package.
{My favorite kinds to use for this salad are either the
mini seashell noodles or the rotini corkscrew noodles}.
Drain, rinse with cold water and allow to cool.
While pasta is cooling…chop up all of your vegetables.
{I usually chop up my cheese and add it to the mix very last!}
As for the dressing…mix together 1/2 cup of mayonaisse and 1/2 cup of Miracle Whip.
In a separate bowl add 1/2 Tbs. – 1 Tbs. of sugar….mixed with water.
{Just enough water to make it a runny consistency.}
Add this sugar water to the dressing mixture.
Mix everything ALL together.
Season with: Salt, Pepper, Garlic Salt, Onion Powder…whatever you’d like to give it that extra KICK!
Chill until serving.
It’s really really yummy.
And even yummier the next day!
