I’ve always just assumed that EVERYONE knew how to make a
Jello ‘Poke’ Cake.
However….when I mentioned that I had made it on one of my ‘weekend’ posts…I ended up getting quite a few emails for the recipe!
Which makes me happy because – – This recipe is a MUST!
And I’m SUPER excited to share it because it is one of my VERY FAVORITE desserts to make throughout the spring and summer months.
Here’s what you’ll need:
1 yellow {or white} boxed cake mix
{plus ingredients listed on the back to make the cake}
2 small boxes of Jello + water
Cool-Whip
Fresh strawberries
Here’s how you’ll make it:
Bake cake as directed on the back of the box.
Once it has cooled – – get the end of a wooden spoon and begin ‘poking’ holes all throughout the cake.
{Like – A LOT of holes.}
Make Jello as directed on back of box.
BUT….instead of placing it in the fridge to set up – – pour it LIQUIFIED right on top of the cake.
ALL OVER!
Place in fridge for AT LEAST
a few hours to set up.
Top with Cool Whip and ‘marinated’ fresh strawberries.
* Marinated = slicing strawberries, placing them in a bowl with 1/2 cup of sugar and stirring it all every so often.
{I usually do this a few hours before it’s going to be served. I just stir it here and there as I’m making my meal}.
It makes up a juice {along with coating the strawberries} that is TO DIE FOR!
I won’t have em any other way, on top of a cake!

I like to DOUBLE the recipe and make a ‘layered’ version with round cake pans,
for special occasions, topping it with blueberries AND strawberries.

And remember – you can in fact use ANY flavor of JELLO that you’d like!
