If you’re in need of a quick, easy and TASTY salad to bring to your next shin-dig…this one is for you.  Perfect for luncheons, showers, or just because.  And did I say…EASY??
Chicken Pasta Poppyseed Salad

8 oz. uncooked spiral shaped pasta

1 can Natural Chicken Breast, drained and shredded {I used Tyson’s refrigerated chicken strips and chopped them up smaller.  A rotisserie chicken shredded would be good as well.  I’m just not a HUGE fan of canned chicken in my salads}.

1/4 cup diced red onion

1 cup fresh quartered strawberries

1/2 cup fresh blueberries

1 cup fresh cubed pineapple {I used tidbits}

1 cup {or more!} low fat creamy poppy seed salad dressing {I used the Kens brand…Mmm}

Fresh Spinach Leaves

Prepare pasta as package directs; rinse under cold water and drain well.  Toss pasta with next 6 ingredients.  You can either serve the salad ON TOP of a fresh bed of spinach OR…you can mix in a few handfuls of the spinach as I did.  You can’t go wrong with this!!
