It’s a cookie making day today.
It has poured down rain here the ENTIRE day.
I love me some rain but I’m not sure I could handle more than a couple straight days of it. I’m not sure how you Pacific Northwest people do it! I need my SUNSHINE!
These cookies are a family favorite.
They’re actually my husband’s VERY favorite kind to make.
And when HE can make something – – – instead of ME making something – – – they instantly become MY favorite too!
Try em with a glass of milk and you’ll be in heaven.

Joe’s Cornflake Cookies
1 cup butter, softened
1 cup vegetable oil
1 cup brown sugar
1 egg
1 cup crushed cornflakes
1 cup quick-cooking oatmeal
4 cups flour
1 Tbs. baking soda
1/2 tsp. salt
2 tsp. vanilla
Preheat oven to 325 Degrees.
Cream butter, sugars, vanilla and egg
Add oil
Mix in dry ingredients
Form dough into walnut sized balls.
Place on cookie sheet and flatten
slightly with a fork dipped in water.
Bake for 10-12 minutes.
