It’s become a tradition in our family….to make homemade Buttermilk Pancakes EVERY Sunday for breakfast. The boys seem to absolutely LOVE this new tradition and they gobble these down each week. Lucky for you I am sharing this super yummy recipe {given to me by my cute friend Molly!} Trust me…you’ll never look at a box of Bisquick the same. Making these homemade pancakes is SO worth it!
Buttermilk Pancakes
2 cups flour
1 1/4 tsp. baking soda
3/4 tsp. baking powder
1 tsp. salt
2 eggs, unbeaten
2 cups buttermilk
1/4 cup butter melted
Mix dry ingredients together. Add remaining ingredients and stir until mixed. Then, cook on buttered griddle.
If you’re feeling REALLY ambitious…try this mouth watering Buttermilk Syrup. I could devour it by the spoonful.
1 cup buttermilk
1 cup sugar
1/4 cup butter
Boil 1 minute and add:
1/2 tsp. vanilla
1/2 tsp. baking soda
It will fizz up when you add the baking soda. Serve over pancakes.
Quick tip: Two weeks ago…I realized that I had left my buttermilk in the trunk of my car overnight. It had rolled out of the bag and I somehow missed it when I was bringing my groceries in. My kids were BEGGING me for these pancakes but I knew they wouldn’t taste right without the buttermilk. I googled my problem and came up with a ‘make your own buttermilk’ solution. If you are in a pinch – this DOES work. Your pancakes will not be AS thick and fluffy…but taste wise….it does the trick!
Place 1 TBS. vinegar in 1 cup of milk. Let set for 5 minutes.
That’s it!
So for THIS recipe…I do 2 TBS. vinegar mixed with 2 cups of milk.
