I am on a recipe ROLL lately.
I do love trying new recipes – – I just have to be in the right mood to get my kitchen all fired up. Who’s with me?
Yesterday I had 3 completely droopy and soggy bananas just hangin out in my kitchen staring at me.
I didn’t want them to go to waste so I hunted down a very specific recipe that called for JUST 3 bananas.
To my luck…I found one!
And they were DELISH!!
They made for the perfect after school snack.
And they’d be perfect for breakfast too!
{And aren’t we all glad that since they have ‘fruit’ in em…they’re no calories?? ;)}

Banana Crumb Muffins
1 1/2 cup flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 mashed bananas
3/4 cup sugar
1 egg
1/3 cup melted butter
1 tsp. vanilla
Topping:
1/3 cup brown sugar
1/8 cup flour
1/4 tsp. cinnamon
1 Tbs. melted butter
Mix together and sprinkle on top of muffins.
Bake at 350 for 18-20 minutes.
