2 Strawberry Recipes Worth Trying:

My mom and I have been up to our eyeballs in strawberries this week.  Yesterday we got together and made homemade strawbery freezer jam. 

I made 27 jars.
My mom made 14.

And we STILL had scads of strawberries left over!

We used THIS recipe for the jam.
We made it up last year too and it was seriously SOOOO yummy – hence, why I decided to double the amount this year – – to make it last longer.

Today, I made my mom’s recipe for homemade strawberry pie. This is one of my very favorite pies EVER that she makes.  I’ve always been too afraid to make it {sometimes cornstarch intimidates me…sorta like yeast does} but today I put my mind to it and got it done.  

And it was EASY!

Marci’s Mom’s Strawberry Pie

4-5 cups strawberries, quartered
1 cup water
1 cup sugar
Dash of salt
2 HEAPING Tbs. Cornstarch
2 Tbs. Strawberry JeLL-O
1 Tbs. butter
1/4 tsp. red food coloring

Bake pie crust {I purchased a Marie Calendar’s frozen pie crust and it was ready within 12 minutes!} LET COOL COMPLETELY!

Mix sugar, cornstarch and water.
Stir constantly over medium heat.
Bring to a boil, stirring constantly – mix well until thickened. 

Remove from heat andt hen stir in JeLL-O, butter and food coloring. Fold strawberries in and pour in baked pie shell.

Refrigerate for a few hours before serving.

    That's how my Grandma taught me to make a fresh fruit pie! The peach version is my favorite, I need to go make pie now!

      Oh Jenny! This is the EASIEST jam you will ever make. I'll admit – the Sure-Jell pectin intimidated me too at first but it is simple pimple!!! I will even come over and show you if you want! xoxo
