As promised, tonight I’m sharing with you a MUST TRY Peach Cobbler recipe.
I love it for 2 reasons:
#1 – it’s delish
#2 – it’s super easy
Added tip: always use fresh peaches from Utah if you can.
They’re THE BEST.
This recipe comes from Life in the Lofthouse.
I adapted it to my liking just slightly.
INGREDIENTS
- 2 cups sliced FRESH peaches
- 2 Tablespoons granulated sugar
- 1 cup granulated sugar
- ½ cup butter, softened
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- pinch of salt
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 large egg
- 1 1/2 teaspoon vanilla extract
- Preheat oven to 350 degrees.
- Grease a 2 quart baking dish with non-stick spray.
- Spread sliced peaches in a single layer in greased dish. Sprinkle tops of peaches with 2 Tablespoons sugar.
- In a medium bowl, beat 1 cup sugar and softened butter together until combined. Add flour, baking powder, salt, nutmeg and cinnamon. Mix. Then add in egg and vanilla. Continue to beat and mix together until just combined.
- Using a spatula, carefully spread batter over the tops of peaches. Try to spread out as evenly as you can.
- {Batter will be thick. I had to use my hands to sort of press it all out onto the peaches.}
- Bake in preheated oven for 40 minutes or until crust is golden brown. Remove from oven and let set 5 to 10 minutes before serving.
Enjoy with a scoop vanilla ice cream!
