* Our weekend actually began on Thursday.
Joe took the day off work to head up to our Stake Pioneer Trek with me…
A ‘Pioneer Trek’ is basically when the youth of our church dress and live like pioneers for 4 days and 3 nights.
They pull handcarts, sleep on the ground, cook their own food, etc….all to hopefully catch a small glimpse as to what their ancestors did for them.
When these sweet kids {350+!} rolled into their camp on Thursday, I was literally a sobbing mess!!!
Where on earth do you find kids that would give up part of their spring break to do this??? And guess what….they were SMILING! I still can’t even wrap my brain around it because let me tell you – – Joe and I were there for ONE day and we were completely pooped by the time we drove home and got into our comfy beds.
I was so moved by being apart of this experience for such a short moment.
Did I mention that they were in the middle of the desert, too?
With rattlesnakes?!?!
{Side note: I used to think that the desert was so blah and ugly. I LOVE the desert now. Like, with all my heart.}
Downside of being outside all day when bushes and trees are in full bloom? I woke up on Friday looking like this…

No joke.
I sent this pic to Joe while he was at work, telling him it was exactly how I felt. I could barely breathe!!!! And when I did – – I sneezed! It was not a pretty sight.
London and I snuck out real quick to grab some groceries and donuts…
{I prayed that I wouldn’t run into anyone I knew with how I looked!}…
London’s usual: A donut with sprinkles, a Sunny D and a side of sausage from my breakfast sandwich.

We spent the rest of the day at home, on our couches, watching ‘Moana’ and doing absolutely nothing.
I managed to scrape together my favorite St. Patrick’s Day meal…..
…of Bangers and Mash.

Usually we go HERE for it on St. Patty’s Day but since I wasn’t feelin so hot, we stayed in and I tried my hand at it.
* Saturday we dropped London off at a birthday party and the boys and I went out to lunch HERE.
London attended my cute niece’s MOANA themed birthday party….
…and can you even STAND how cute those headbands are??? My talented sister-in-law MADE them!!!!
I wish you could see it in person.
It’s SO adorable!
* Date night Saturday night HERE with one of our favorite couples.
This is such a fun place if you’ve never been.
We ate inside and their salad bar >>> everywhere else.
* Churchey-church on Sunday.
We napped afterwards and grilled T-bone steaks for dinner.
Cubby thought he had won the lottery when we gave him one of our bones. {Side note: Cubby is now 20 pounds!!! Holy cow. He is growing SO fast!}
I baked banana chocolate chip bread for dessert…
And we ended the evening together watching AFV.

Spring Break week 2 is up this week:
* Hoping to turn off the a/c – – it’s been SO HOT HERE!
* Hoping to take the kids to see ‘Beauty and the Beast’ – – have you seen it yet?
* Taking London to the American Girl Doll store for lunch.
We’ve never been.
I may be as excited as she is.

Trek is amazing ..though I've never been I've heard the best things. We do Moroni quest here. My husband gets to go in July.
