This RECIPE for Chicken Salad is my VERY favorite.
The best taste and just the right crunch.
I whipped up a batch for the Superbowl and served mine on those mini Hawaiian rolls.
They were a hit!

Chicken Salad

Mix Together:
2 cups chopped, cooked chicken
2 cups chopped celery {I’m allergic to celery and so I use chopped cucumbers. Mmmmm!}
1 tsp. diced green onions
1 cup grated mild cheddar cheese
1 cup slivered almonds {I chop my up just a tad}
4 hard boiled egs, chopped up {My favorite ingredient of this recipe!}
Dressing:
2 Tbs. lemon juice
1 tsp. salt
1 1/4 cup mayo
Mix dressing with above ingredients and serve with crossiants or rolls.
* I also like adding grapes {cut in half} and/or craisins to mine!
