The other night we headed over to our friends’ house for a little bbq/swim party. {Have I mentioned that even though it’s hotter than HOT right now….I DO love summer?!}
I brought dessert and decided to make an old family favorite.
This cake is the PERFECT dessert for summertime.
It’s refreshing and moist.
{And listen….I loathe the word moist but it’s the perfect word to describe it. Now excuse me while I dry heave. ๐}
Anyways – – it’s super easy to whip up and super yummy.
I promise – – you’ll love it!
Summertime Pig Pickin Cake
1 package yellow cake mix
4 eggs
1/2 cup oil
1 can {the bigger size} mandarin oranes {don’t drain}
Mix the above ingredients together and bake in a greased and floured 9 x 13 pan {or 2 round cake pans}.
Topping:
1 large can of curshed pineapple {not drained}
1 package of vanilla instant pudding
1 large container of Cool Whip
Mix together and spread over cooled cake.
Refrigerate until chilled and serve with a scoop of vanilla ice-cream!
