While attending June’s Fiesta last week…I tasted the most amazing strawberry flavored cupcakes that I have EVER tried, thanks to my sis-in-law Jenny. Lucky for me…she shared the recipe so I was able to make them up for my young women on Sunday, as it was my counselors birthday. Perfect reason to celebrate, right?!
The recipe comes from Paula Deen {LOVE!} and includes a package of dry strawberry Jello mix and frozen pureed strawberries in syrup. Did I mention…they’re TASTY?!?
Ingredients
1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant gelatin 1 (15-ounce) package frozen strawberries in syrup, thawed and pureed 4 large eggs 1/2 cup vegetable oil 1/4 cup water
Directions
Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
As for the frosting…I made up my favorite Cream Cheese Frosting recipe. It complimented the strawberry flavor, perfectly! My sis-in-law used a Vanilla Buttercream recipe for her frosting…and it was equally as mouth watering!
Cream Cheese Frosting
2 – 8 oz. packages of Cream Cheese
1/2 c. butter, softened
1 tsp. vanilla
2 1/2 c. powdered sugar
pinch of salt
Mix cream cheese and butter until smooth. Blend on slow as you add vanilla, salt and powdered sugar. Once blended, turn mixer on high and blend until nice and fluffily. Use immediately or refrigerate.
