I forgot about how GOOD these cupcakes were until I made em back up today.
They are the PERFECT spring time treat, they’re EASY and they’d be sure to be a HIT at your Easter dinner this weekend!
1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant JELLO
1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Preheat oven to 350 degrees F.
In a large bowl, combine cake mix and
JELLO. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth.
Pour into prepared pans, and bake for 25 minutes, or until a wooden pick inserted in the center comes out clean.
Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.
Cream Cheese Frosting
2 – 8 oz. packages of Cream Cheese
1/2 c. butter, softened
1 tsp. vanilla
2 1/2 c. powdered sugar
pinch of salt
Mix cream cheese and butter until smooth. Blend on slow as you add vanilla, salt and powdered sugar. Once blended, turn mixer on high and blend until nice and fluffily. Use immediately or refrigerate.
OMG these were by far 2 of the best cupcakes I've had! Making them this weekend
