As promised…here are
TWO refreshing spring/summertime recipes
to try out at your next dinner.

Strawberry Cake
1 white cake mix {use only the egg whites in the cake mix + the rest of the ingredients.}
Bake according to directions on back of the box.
1 cup of powdered sugar
11 oz. cream cheese
16 oz. Cool Whip
1 tsp. vanilla
1 package Danish Dessert {in the jello aisle}
About 4 cups of sliced strawberries.
Make cake in a jelly roll pan and let cool.
{I’ve made this with a jelly roll pan AND a 9×13 pan. I like it lots better in the jelly roll pan. The cake doesn’t come out as thick and it’s a better ratio of cake to strawberries.}
Mix sugar and cream cheese together and then add cool whip and vanilla.
Spread on top of cake.
Make Danish Dessert according to directions on package, using the pie glaze. Fold in strawberries and then pour over cream cheese mixture. Put in fridge. Must be served cold.
This dessert is great if you need something for a lot of people!
NOTE: I had very little luck finding the Danish Dessert here in AZ. I actually found some at Wal-mart when I was up in UT. BUT…if you can’t find any…no worries…just go ahead and buy a tub of strawberry pie glaze already made up…usually found right next to the fresh strawberries in your grocery store.
Easy Cobbler
Layer 2-3 cans of fruit pie filling in the bottom of a 9×13 pan.
{I like to use Peach pie filling, blueberry, cherry, etc.}
Sprinkle 1 box of yellow cake mix over the fruit.
Melt 1 1/2 sticks of butter and drizzle over the top of the cake mix.
Bake at 400 degrees for 40 minutes or until golden brown on the top.
Serve with vanilla ice-cream!
