It’s that time of year again where I start whipping up my favorite green ‘bread’. I say bread because that’s what the original recipe called it but let’s be honest…it’s so sweet it’s more like a tasty cake loaf.
It turns GREEN {from the pistachio pudding} and it’s the PERFECT little something to bring to neighbors and friends for St. Patrick’s Day this weekend!

Pistachio Pudding Bread
{but it’s really cake!}
1 package Pillsbury yellow cake mix
1/4 cup water
4 eggs
1/4 vegetable oil
1 small package instant pistachio pudding mix
1 cup sour cream
Mix everything together until well blended.
Grease two large loaf pans and pour evenly into each.
Mix in a small bowl:
1 cup brown sugar
1 tsp. cinnamon
Mix together and crumble generously over the tops of both.
{You’ll probably have some of this mixture left over.}
Bake at 350 degrees
for 50-60 minutes for large loafs.
I also made smaller loafs and baked for about 40 minutes – just keep checking the middles with a fork to see if it’s done.
