How am I just now discovering the tasty goodness of SPAGHETTI SQUASH?!?
I mean really.
Cooking one has always intimidated me but I took the plunge last week and now I’m hooked.
I posted about it on my Instagram and had some inquiries as to how I cooked it {there are a few different ways you can do it} and here is what worked BEST for me:
Microwave your squash for 2-3 minutes – – just enough to make it easier to cut through.
Cut the stem off and then slice in half length wise.
Scoop out the seeds and guts – just like you would a pumpkin.
Salt and pepper each half and then place it upside down on a cookie sheet. {I think I sprayed my cookie sheet first}.
Bake at 375 for 45 minutes.
It will come out PIPING HOT!
Let cool for a few minutes and then flip the halves over and start scraping the sides. Keep scraping
until you are about close to the skin.
Add some butter and some more salt and pepper to taste and wa-lah! You can eat it just like that OR you can add pasta sauce and have it like spaghetti. I’ve pinned quite a few different recipes involving the spaghetti squash and I’m excited to try them now. Here are a few I’m going to give a whirl:

If you're in a hurry you can put it in a microwave safe dish cut side down with an inch or so of water then microwave for 15 minutes-done! I do love the idea to microwave for a few minutes before- it's super hard to cut so I'm definitely going to try that!
