Pumpkin Bread + idea.

I’m sure of two things. {Ok…I’m sure of really more than that but for today’s blogging purpose…it’s two}. I’m sure that: I have the BEST pumpkin bread recipe of ALL time.  And…I’m sure that:  I have the BEST counselors and advisors in my Young Womens organization.  I am just super lucky like that.  Yesterday….I combined the TWO and came up with this little treat.

Wrapped up and ready to deliver!

Pumpkin Bread Recipe

Beat 5 eggs

Add:

1 1/3 cup oil
1 – 16 oz. can pumpkin
2 cups flour
2 cups sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
2 – 3 oz. pkg. instant vanilla pudding {this is the KEY ingredient!}

Mix until creamy.  Add nuts, raisins, or CHOCOLATE CHIPS…my favorite!

Bake at 350 until done.  If you are baking mini muffins with this recipe, bake for 12-15 minutes.

Makes 24 muffins or 2 large loaf pans or 5 small loaf pans.

    It took my mini loaf pans about 40-45 minutes to cook. If you are cooking 2 LARGE loaf pans…it takes about 60-70 minutes. I just keep checking it and testing with a toothpick!

    Hi Marci, My daughter-in-law put me in touch with your blog. You do sound so upbeat and loving toward your counselors. I do not bake…I hate to cook…but once in awhile I'll try something, and your pumpkin bread recipe sounds great. But…how long is "bake until done?" I would have no idea how long that would be!

    I am so glad that I found your blog! I have been in Young Womens for 4 years and just got put in as the president 6 months ago and I am out of ideas!! This is such a cute idea! I love it! THanks for sharing! You seem like such an fun caring president! ๐Ÿ™‚
