Usually I go all out on St. Pattys Day.
Decorated table, green milk and leprauchan shennanigans.
Not this year.
I just wasn’t feelin it last night before I went to bed.
And guess what?
My kids didn’t even bat an eye this morning.
In fact…THEY forgot it was St. Patricks Day.
Made me feel good.
Real good.
LoL.
We’ll celebrate the holiday tonight by having Lucky Charms for dinner which is a win! win! for all of us.
Sugary cereal for the kids.
No cooking/No mess for me!
London has a cute little friend over playing today and their bright cheery green-ness is all the St. Pats spirit I need!
Every year I try and whip up some loaves of my Pistachio Pudding Bread around St. Pattys Day.
This ‘bread’ is good.
I call it ‘bread’ but it really should be called
‘cake in a loaf pan’.
It’s my fave.
Super easy.
Super delish.
And the inside turns out GREEN!
Pistachio Pudding Bread
{but it’s really cake!}
1 package Pillsbury yellow cake mix
1/4 cup water
4 eggs
1/4 vegetable oil
1 small package instant pistachio pudding mix
1 cup sour cream
Mix everything together until well blended.
Grease two large loaf pans and pour evenly into each.
Mix in a small bowl:
1 cup brown sugar
1 tsp. cinnamon
Mix together and crumble generously over the tops of both.
{You’ll probably have some of this mixture left over.}
Bake at 350 degrees
for 50-60 minutes for large loafs.
I also made smaller loafs and baked for about 40 minutes – just keep checking the middles with a fork to see if it’s done.
Tie a little green ribbon around it and you have the perfect sweet treat to deliver to friends and neighbors tonight!
