We pray for rain ALL the time around here.
Today…those prayers were answered…

Its true.
The city of Chandler got 5+ inches of rain today!
{I know that’s not much to you Seattle-ers
but to US Zonies…this is HUGE!}
Then…my husband found this pic online….
And of course died laughing and sent it to everyone he knew.
Annnyyyyyy-hooozle….what I’m getting at IS….
all this rain and cloudy weather has made it feel a TINY bit like fall is near.
And that makes me VERY VERY happy.
One of my VERY FAVORITE things to make during fall time is this soup….
Which is what I’m whipping up tonight.
It’s SOOOO super easy to make and my family LOVES it!
ENJOY!
Chicken Enchilada Soup
26 oz. can cream of chicken soup
26 oz. can ranch style beans
4 oz. diced green chilies
26 oz. chicken broth
2 cans of Rotel diced tomatoes with cilantro and lime
{This gives the soup a little kick. If youdon’t like ‘kick’ then just add regular diced tomatoes.}

Rotisserie Chicken – shredded
Combine everything in a crock pot or on stove. Can simmer all day if needed.
Garnish with your choice of cilantro, cheese, salsa, sour cream or crushed tortilla chips.

Thanks ๐ Of course the sun came out later that day and started dry-ing things right up. It was a nice little change for the short bit that it lasted.
