As promised…here are two of my very favorite BREAKFAST recipes.
They’re always a hit whenever they’re served.

Breakfast Casserole
24 oz. frozen potatoes
1/2 cup melted butter
1 1/2 cup Monterey Jack cheese
1 1/2 cup cheddar cheese
1 1/2 cup cubed ham
{Just ask your local grocery store deli to ‘cube’ the ham for you when purchasing}
1/2 tsp. salt
8 eggs
1 cup evaporated milk
Put potatoes in bottom of 9×13 pan. Pour butter on the potatoes. Layer cheese and ham. Bake at 425 for 25 minutes.
Beat eggs, milk and salt. Add to above. Bake at 350 {very important!} for additional 20-25 minutes.
Cinnamon Roll Casserole
2 packages Pillsbury tube cinnamon rolls
1 cube butter
1 cup brown sugar
Pour 1/2 cube melted butter into a 9×13 pan. Sprinkle 1/2 cup brown sugar over the butter. Cut cinnamon rolls into chunks. {I always cute them into 4 triangles} and drop into 9×13 pan. Drizzle the other 1/2 cup of melted butter on top of the cinnamon rolls. Sprinkle with the other 1/2 cup brown sugar.
Bake according to the directions on the cinnamon roll package.
{I always find that my casserole takes about 25 minutes total to cook}.
Cook until edges are golden brown and drizzle with the icing that comes inside the tube of rolls.
{Heat for about 10 seconds in the microwave before drizzling}.

I've never done it that way but, I don't know why not? I might just brown the potatoes first a little so they don't get mushy. Good luck! ๐
